Pumpkin Butter Pop Tarts

Writer's picture: The Little ThingsThe Little Things

This recipe is being added to my fall bucket list for next year! They were so easy to make and so, so delicious! I had a jar of pumpkin butter from Trader Joe's that I needed to finish up before Thanksgiving, and this recipe was perfect!

Pop Tarts

1 frozen pie crust (already dairy-free, yay!)

6-8 Tbsp Pumpkin Butter

Icing

1/2 Cup Powdered Brown Sugar

1/2 Cup Powdered Sugar

2-5 Tbs Milk (I substituted oatmilk, and it worked just fine!)

Let the pie crust come to room temp and use cookie cutter to cut shapes

Put 1 TBSP pumpkin butter in middle of one crust shape, and then top with second shape. Seal edges well and then poke a few holes with a fork in each tart. Bake at 350 for 15-20 minutes or until golden.

While tarts are cooling, mix sugars and milk until desired consistency, pour over tarts and let harden/cool. Enjoy while they're hot!
